    1. Beat butter, cheese and salt together in mixer until completely smooth and blended.
    2. Work in flour in a smooth dough.(You can use a blender for this step, but results are superior if you work in the flour with your fingertips, a fork or rubber spatula).
    3. Flatten dough in foil to form a 8x6 inch rectangle.
    4. Chill overnight.
    5. Remove from refrigerator 8 to 10 minutes before rolling. (Many recipes suggest a 30 minute wait before rolling dough, but it's easier to handle when rolled as cold as possible.) Divide dough for easier rolling and to ensure cold dough. Keep unrolled portion in refrigerator until ready to use.
    6. Roll on floured pastry cloth with floured rolling pin or between two sheets of waxed paper.
    7. The former is easier, in my opinion, and I find absolutely no sticking when I use a pastry cloth and covered pin.
    8. I first roll cloth and pin well with flour and then shake out excess.
    9. When using waxed paper, loosen it on both sides of pastry several times as you roll.
    10. Shape as directed in specific recipes and chill before baking. Brush tops (only) of all pastries with egg yolk beaten with cream.
    11. Bake in moderate oven (350 degrees) unless otherwise specified.

  • type: meat

  • instructions
    1. Buy two large turkey-size disposable baking pans with the high sides (4 or 5") and also a box of heavy duty, extrawide AL foil.
    2. Piece two pieces of the foil about four feet long together with a French seam.
    3. Take another piece of foil about 2" square and put it in the middle of the larger piece.
    4. Put the ham, skin side up, in the middle of the 2" piece.
    5. Take a large, thawed, can of frozen orange juice and pour it over the ham.
    6. Immediately close up the foil, folding the two sides together and then folding the ends up and on top of the ham.
    7. Place the ham in the foil pans and bake 25 minutes per pound at 325 degrees.
    8. While the ham is cooking, make fresh bread crumbs in the blender with day-old bread. Takes about 10 pieces of bread - old rolls will work, too.
    9. When the ham is done, remove it from the oven and open the foil - watch out for the steam and the grease in the pan - VERY HOT!
    10. Let it cool a little bit. Grab a corner of the skin with your fingers or a fork and peel it off using a sharp knife to slice between the skin and the fat- like you are skinning an chicken.
    11. Cut most of the fat off, leaving a very, very thin layer - or none at all (I prefer none).
    12. Get rid of all the grease (not fun - I usually pour it an old coffee can or in the bushes across the street - don't put it down the drain!).
    13. Put the ham back in the foil baking pans - minus the cooking foil you discarded with the grease.
    14. Pour a layer of dark molasses over the ham and put it in the oven at 400 degrees for 10-15 minutes - until melted and bubbly.
    15. Remove ham, pour another layer of molasses over the ham and then sprinkle liberally with bread crumbs - a nice thick layer because a lot of the crumbs are absorbed into the molasses. Put the ham back in the oven and let the bread crumbs get lightly browned - - they burn in a hurry - keep an eye on them - probably 5-10 minutes.
    16. You can decorate the end of the hambone with a piece of construction paper or tissue fringed on the ends-like they do in fancy restaurants, if you're having company.

  • New Mexico Red Chile Salsa

  • type: salsa
  • meal: sauce
  • ingredients
  • instructions
    1. Heat the broiler and set a heavy skillet over medium heat. Break the stems from the chiles and shake out the seeds. Place the chiles in the heated skillet, pressing them down with a kitchen towel until they have darkened in spots and you can smell their aroma. This process will take only moments. Place the toasted chiles in a bowl and pour very hot water over them. Weight them to submerge. Soak for 20 minutes, drain, and reserve the soaking water.
    2. Spread the tomatoes on a foil-lined baking sheet and set on a rack positioned at the closest level to the broiler. Broil for 5 to 6 minutes, until softened and blackened. Using tongs, turn them over and roast for another 5 to 6 minutes, until softened and darkened on the other side. Cool, then peel the tomatoes, reserving any juices that accumulate and discarding the peelings.
    3. Turn the oven down to 425 degrees. Separate the onion into rings. Spread the garlic and onion on a foil-lined baking sheet and roast until the garlic is soft and the onion is browned, about 15 minutes.
    4. Chop the onion and garlic and set aside. Place the soaked chiles in a blender with a little of the soaking liquid, puree and reserve. Add the tomatoes and reserved juices to a food processor and pulse until coarsely pureed. Place the purees in a bowl and mix thoroughly. Add the oregano and water, if necessary, to give the salsa a pleasing consistency.
    5. Taste and adjust seasonings with salt and sugar, drizzle with olive oil if desired.
